FORMAGGIO

La storia del formaggio ha origini antichissime nel bacino del Mediterraneo, in nord Africa e in Asia minore. La leggenda narra che un pastore avesse messo del latte in uno stomaco di pecora in cui era rimasto del caglio, dove si trasformò in formaggio; probabilmente fu invece determinante l’osservazione delle viscere di animali macellati ancora in fase di allattamento. Le testimonianze più antiche risalgono al III millennio a.C.

Il più antico reperto ritrovato che testimoni la produzione del formaggio risale ai Sumeri, in Mesopotamia, nel III millennio a.C. Altri documenti risalenti alla stessa epoca testimoniano la conoscenza dei metodi di lavorazione e produzione del formaggio si possono trovare anche in Egitto. Per la diffusione del formaggio anche in Italia dovremo aspettare il 1500 a.C. che poi darà origine a famosi formaggi Italiani come il gorgonzola.

L’arte di produrre formaggio è andata sempre più migliorando e affermandosi fra gli antichi Greci e gli antichiRomani. Nel Medioevo vi fu inizialmente un’involuzione, poiché solo nei monasteri era possibile conservare la tradizione latina, ma nel periodo più tardo i formaggi cominciarono ad essere apprezzati e a comparire sulle tavole nobiliari. Un trattato sulle qualità nutritive del prodotto fu redatto dal medico ed accademico vercellesePantaleone da Confienza nella sua Summa Lacticinorum nella seconda metà del Quattrocento.

Questo nome è dovuto molto probabilmente al fatto che, per la sua fabbricazione, si usassero fino a non molto tempo fa delle forme “pischeddas” di legno di castagno forate o anche di quercia o di pero selvatico, sul cui fondo era scolpito un fiore, forse il giglio o l’asfodelo, che lasciava sul formaggio un vero e proprio marchio che conteneva spesso anche le iniziali del nome del produttore.

Negli anni trenta fu lanciata da una ditta, ad iniziativa di una nota istituzione, un tipo di forma, molto adatta per la fabbricazione del Fiore Sardo, in alluminio, con rigature concentriche ai lati e con la scritta sul fondo “Fiore Sardo”. “Tali forme, capaci di una pezzatura di 2-3 Kg, presentavano però l’inconveniente di imprimere nella pasta tutti gli ornamenti in rilievo, inconveniente che non permetteva una perfetta pulizia della superficie di esse durante il periodo di stagionatura. Sarebbe cosa più pratica rimetterle in commercio ma perfettamente lisce”. (Peppino Scarpa, 1934). Oggi vengono utilizzate forme “pischeddas” di acciaio inox.
